(UEPB), C\u00e2mpus de Lagoa Seca, ganhou um importante equipamento que vai contribuir para melhorar a qualidade na cacha\u00e7a produzida na Para\u00edba e impulsionar a agroind\u00fastria na regi\u00e3o. Trata-se do Laborat\u00f3rio de Microbiologia para Fermenta\u00e7\u00e3o, constru\u00eddo dentro do Complexo Agroindustrial do C\u00e2mpus II, que vai realizar pesquisas com leveduras para fermenta\u00e7\u00e3o alco\u00f3lica, atrav\u00e9s da biotecnologia, visando isolar cepas espec\u00edficas usadas na fabrica\u00e7\u00e3o do produto nos engenhos de alambique do Estado.<\/p>\n<p>A Para\u00edba \u00e9 refer\u00eancia na produ\u00e7\u00e3o de cacha\u00e7as, mas ainda n\u00e3o disp\u00f5e de pesquisas referentes a fermenta\u00e7\u00e3o do produto, o que ser\u00e1 poss\u00edvel acontecer na Unidade de Processamento de Fermenta\u00e7\u00e3o e Destilados da UEPB, possibilitando, no futuro, a cria\u00e7\u00e3o de um selo que atestar\u00e1 a qualidade do produto. Ele enfatizou que o trabalho do laborat\u00f3rio ter\u00e1 repercuss\u00e3o direta e retorno garantido, com a realiza\u00e7\u00e3o de an\u00e1lises que futuramente possibilitar\u00e3o a cria\u00e7\u00e3o de um selo da cacha\u00e7a paraibana, de forma diferenciada. \u201cO que isso vai gerar de resultados outros \u00e9 algo que n\u00e3o tem como calcular\u201d, frisou. <\/p>\n<p>Conforme explicou o diretor do C\u00e2mpus, professor Jos\u00e9 F\u00e9lix, o laborat\u00f3rio, dar\u00e1 suporte \u00e0s pesquisas realizadas com fermenta\u00e7\u00e3o alco\u00f3lica para melhorar a qualidade da cacha\u00e7a produzida na regi\u00e3o. A ideia \u00e9 fortalecer o setor de cacha\u00e7a da Para\u00edba e impulsionar a economia na regi\u00e3o. Professor F\u00e9lix ressaltou que a UEPB sai na frente quando pensa em criar uma estrutura para avan\u00e7ar na qualidade da cacha\u00e7a de alambique paraibana. Os produtores de cacha\u00e7as do Estado, segundo ele, ainda trabalham de forma artesanal e isolados, necessitando de tecnologias e pesquisas no que diz respeito a fermenta\u00e7\u00e3o do produto.<\/p>\n<p>\u201cCom esse laborat\u00f3rio, vamos poder realizar pesquisas importantes de algumas leveduras espec\u00edficas que, porventura, possam ocorrer na regi\u00e3o, sobretudo no Brejo, isolar e trabalhar com melhorias de leveduras atrav\u00e9s da biotecnologia\u201d, disse. O laborat\u00f3rio vai operar em sintonia com o engenho de alambique do CCAA, que j\u00e1 produz licor, vinho e a cacha\u00e7a Serra da Borborema. CCAA ter\u00e1 grande contribui\u00e7\u00e3o para o setor da cacha\u00e7a na Para\u00edba, porque ser\u00e1 o primeiro da regi\u00e3o a realizar pesquisas com sele\u00e7\u00e3o de leveduras com fermentadoras. \u201cNosso foco \u00e9 contribuir com esse setor produtivo t\u00e3o importante para que, no futuro, tenhamos um selo de qualidade da cacha\u00e7a paraibana e uma estudantes do Bacharelado em Agroecologia, do Curso T\u00e9cnico em Agropecu\u00e1ria e do Mestrado em Ci\u00eancias Agr\u00e1rias.<\/p>\n<p>O diretor Fapesq, Roberto Germano, destacou a import\u00e2ncia do Laborat\u00f3rio de Microbiologia para Fermenta\u00e7\u00e3o como um equipamento que vai ajudar a impulsionar o setor de cacha\u00e7a na Para\u00edba. \u201cIsso mostra claramente Em breve, o laborat\u00f3rio receber\u00e1 outros equipamentos modernos, gra\u00e7as ao conv\u00eanio da Institui\u00e7\u00e3o com a Fapesq, em um investimento de R$ 187 mil na unidade.
